Given that you have access to all the materials this resource calls for, a pool and swim fins you do not mind destroying, this is wonderful outdoor project that combines science with physical activity. Some research will need to be done before hand has a long list of terms the students need to be familiar with. I really enjoyed the use of a table to record the results of each trial and the use of a bar graph to display their results. I also liked how it asked them to find the average of each run to give their math skills some practice. In addition to the table, I would ask the student to make a prediction about which swim fin they think will help them move the fastest so they can approach it like a real scientist. I would also include a control with no swim fins, just for fun, to see how adept the human body is to swimming.
